The BookPageSorter shows only one or two pages, and gives no hint of how to sort them. One can drag and drop a page, getting what looks like a new order, but accepting it with the Okay button has no effect.

With a Stack open, containing more than one page, open the Stack menu with the toolbar button, then click the bookish items... command to get the Stack/ Book menu and click sort pages.
