Hard to be precise right now, but if you consider the relatively small part of
the midi/serial/sound/etc code that goes into interp.c, I expect not much,
though of course lots of little bits do tend to add up. There would be some
reduction in the size of the prim table, since we wouldn't need to have 700+
slots anymore.
If/when I got BitBLT to be a plugin, that would make quite a change I imagine.

The chief benefit is the size reduction of the executable, lower memory usage
when not using the sound/serial/etc components, simpler porting, potential for
flexibility, whatever.
