This is OS dependent. On windows, provide the -headless option on the
command line. On Acorn, just never ask to open a window. On Unix, in
traditional Unix style, you build the vm from source and make it via
"make headless" instead of plain "make". 

It may be that none of these are what you really want by headless. If
you want not to lose your eyes and ears, but to use different eyes and
ears, then you might investigate running PWS headless and using using
the web to communicate with your image.
