Since I've posted twice and gotten no response, and since multiple
people have tried and failed, I am going to assume that there is
absolutely no application in existence that will want plain text.  Thus,
if this is the default, every single client that opens a file will have
to change the file mode that it is opened with.

Really, plain text and binary are the same thing, anyway, right?  And
who wants binary as the default mode?
