If you intend to mainly live in the image and not exchange to many files
with the outside world DOS (actually FREEDOS www.freedos.org) might be a 
thing to consider.

The port is not actively maintained, but the hard work of porting has 
been done already. It would now be maintenance job.

However a KNOPPIX (or MORPHIX) type of thing as a lightwight OS 
underneath would probably be better in the long run.

There are projects out there by Squeakers from Argentina aiming at this.
