I am afraid this thread tends to get offtopic but I do things like that. 
Latest installation was using the data of ultrasonic anemometers to 
render sound. It was done with Max/MSP and PD, latter is open source too 
(http://www.pure-data.org).

A quicktime of it can be seen at http://www.zierbaustelle.de/

I do interactive computerart where the systems reacts on userinput. I 
did a lot with videocams and motiontracking.

Squeak looks good for creating and distributing artistic software on 
CDRom for instance. With the networking parts I could imagine to create 
some specialised server connecting the hardware on an exhibition to the web.
For further discussion we can maybe connect offlist..
