Did you take a look at the tutorials at http://www.squeakland.org ?
If you speak French I can point you to hundred of tutorials material.

Are you looking at using the EToys part of Squeak, or also the Smalltalk 
language part.
For the later, some video examples of what can be done when programming 
educational material, it is for primary school
