Jesse,

Two things:

1. If you running in Squeak in a window as opposed to full screen, you can resize the window by dragging the lower right corner.
2. In the World menu/appearance... menu, toggle back and forth between full screen on and full screen off.

Some combination of the above will get you where you want to be after changing the resolution.
