FWIW: I think this largely a mail "client" issue. Different clients offer different degrees of flexibility. 

I have also noticed in the past that sometimes the "Reply-to" was set to the original sender rather than the list. I think this is something the original sender has control over (i.e. if you send a message with a "Reply-to" header, I don't think the list overrides it).
