One more thought....has anyone heard of SEUL (Simple End User Linux)?  They 
seem to report on open source projects that would benefit education...there's 
a lot of good stuff on there, and I think Squeak definitely deserves a 
mention.  Check out the reports section...it's quite up-to-date and keeps a 
good record of what's being done with Linux in the educational realm.
