Yes, you can do that in IRC.  You create a new channel by joining one
that doesn't yet exist, and is not registered with ChanServ (if that
service is available).  Tell your friends to joint as well, and there you
have a private chat.

In IRC, you can also make channels invite only (it's visible to people who
/list, but they cannot join) as well as private (invisible).  However, I
don't think there is support for this in either Squeak IRC clients.
