Just like any discipline, there are many points of view, theories and hacks.

It's quite a vast subject from a rather old (in computer years) textbook "The 
Psychology of Human–Computer Interaction" to Donald Norman's work (Design of 
Everyday Things, see his other books: http://www.jnd.org/books.html#641),  
Sketchpad (Alan Kay likes to use this as a demo: 
http://www.jnd.org/books.html#641) Jef Raskin 
(http://jef.raskincenter.org/home/index.html) has a book focused more toward 
computers.
