Hi,
It's possible I'm simply not seeing the obvious, but as the admin of a project, how can I delete mczs? For instance, if I upload an mcz to the wrong repository, I'd like to be able to remove it, but I can't see how to.

Assuming you are referring to squeaksource.com, use the web interface. Log in, navigate to the version you want to delete. On the left side of the screen, you will see a "Delete Version" option.
AFIK there is no way to do this from the image, but the web interface has additional features.

Sidenote:
in SqueakSource3, it is possible to delete a version via HTTP DELETE verb, yet, there is no button in the UI yet.

Oh, I see! You hit the details for the version, and you can delete that version or the entire package. I'd expected to see a delete link next to the version, where you see the "<details> <downloads>".
Great, that scratches my itch. Thanks!
