Ugh, I'm truly confused myself. Gandi's system creates the initial image with 3GB, and then says: "log back in after server is created to increase disk space". That's what I did. It now shows this: Disk name (1/1) Type Size Status Boot disk Boot disk System Disk 60 GB Attached X
Have you poked around with vgscan/lvscan and the like to see if it's actually a 60GB medium that just needs a resize?
I also rebooted the server, thinking that perhaps the resize hadn't happened until a reboot.
Since I didn't give myself access, I can't check myself. I even enabled the console, but since we didn't set a root password and just opted for SSH keys, I can't log into the console to see what's going on.
Nothing in the management interface says anything obvious about what to do to resize it.

seems to indicate you do have to do a resizefs. I notice the first action is umount, so that will be hard with / ;), but perhaps you can just remount read only and do it?
Or, perhaps they gave you more space on the virtual sizes that can be made into a separate filesystem (which perhaps is preferable anyway)?
