The Finder should now display a thumbnail for new Etoys projects. I wrote a plugin ("quicklook generator") that is basically one page of C code to parse the project zip file and extract the new thumbnail.png, passing it to the Finder (attached).

Downloaded and installed the new beta, fired it up, made a new project, saved it, and sure enough, the new project appeared with a proper thumbnail in the Finder.
